  • Prepare all ingredients by measuring them out and having them ready. This makes the mixing process smoother. At the same time, preheat oven to 320 Fahrenheit (160 Celsius).
  • Combine the almond flour, vanilla protein powder, baking powder, butter, and egg yolk in a bowl. Mix a mixer or a spatula until you have a dough-like consistency. Place into the refrigerator for 30 minutes or up to one hour. 
  • Take ¼ of the chilled dough and roll it into a log on parchment paper. Cut the log into equal-sized pieces, then roll each piece into a small log and shape it into a crescent. Place the crescents on a baking sheet lined with parchment paper. Repeat with the remaining dough.
  • Bake in the oven at 320 Fahrenheit (160 Celsius) for 10 minutes until the cookies are lightly golden and set. While the cookies are still warm, dust them with vanilla protein powder using a sieve. Let the cookies cool completely on the pan before handling them; they will firm up as they cool. You can dip one corner in chocolate or sprinkle with sliced almonds as an extra touch.
