Deep Fried Okra

This deep-fried okra uses almond flour for a golden, crispy coating that clings to every pod. Cayenne, smoked paprika, and black pepper add savory heat for a Southern-style side dish without cornmeal or all-purpose flour.

Ingredients

  • 1 Pound Fresh Okra sliced into rounds
  • ½ Cup Almond Flour with a slightly chunky grind
  • ½ teaspoon Salt plus extra for serving
  • ¼ teaspoon Black Pepper
  • ¼ teaspoon Cayenne Pepper
  • ¼ teaspoon Smoked Paprika
  • Oil for frying

Instructions

  • Wash and dry the okra well, trim the ends, and slice into bite-sized rounds.
  • Toss the okra with the seasonings and almond flour, then let it rest briefly.
  • Heat the oil and fry the okra in batches for 4–5 minutes until golden and crispy.
  • Drain on paper towels, season with extra salt, and serve hot.

Notes

  • To check if the oil is hot enough, drop a small piece of almond flour coating into the pan. If it sizzles immediately and rises to the surface, the oil is ready. If it's too cool, the coating absorbs oil instead of crisping.
  • Keep the first batches warm on a wire rack while the remaining okra fries. Paper towels drain the oil, but the wire rack in a low oven keeps the coating crispier for longer.
  • If you want to try the buttermilk route, soak the sliced okra in buttermilk for 10 minutes before coating. This adds a slight tang and helps the almond flour cling more firmly to each pod.
  • You can use frozen okra, but it must be fully thawed and dried much more aggressively than fresh. The extra moisture released during freezing makes the coating much harder to stick properly.
