  • 1 teaspoon Paprika
  • 1 Pinch Salt
  • 1 Pinch Black Pepper freshly ground

Avocado Topping

  • 2 Pieces Avocados diced
  • 1 cup Cherry Tomatoes quartered
  • ¼ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • 1 Piece Lime Juice
  • 1 Pinch Salt
  • 1 Pinch Black Pepper

Instructions

  • Season the salmon, then dice the avocado, tomatoes, onion, cilantro, and cut the lime.
  • Mix the avocado, tomatoes, onion, cilantro, lime juice, salt, and pepper.
  • Cook the salmon in hot oil until browned on both sides and cooked through, then let it rest briefly.
  • Spoon the avocado topping over the salmon and serve immediately.

Notes

  • Pat the salmon fillets completely dry before seasoning. Moisture on the surface of the fish steams rather than sears, and you lose the crispy crust that makes the whole dish better.
  • Do not move the salmon around in the pan after it goes in. Let it sit undisturbed until it releases naturally from the surface, which means the sear is ready and the fillet will flip without tearing.
  • Add a minced garlic clove to the pan with the olive oil for an extra layer of savory depth that coats the salmon as it cooks without any extra steps.
