Ingredients

For the Vinaigrette

  • ¼ Cup Extra-Virgin Olive Oil
  • 3 Tablespoons Vinegar your choice
  • 2 Cloves Garlic minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Sea Salt
  • 1 teaspoon Pepper

For the Salad

  • 1 Piece Cucumber large, deseeded and sliced
  • 2 Pieces Green Bell Peppers chopped
  • 3 Cups Cherry Tomatoes halved
  • 1 Block Feta Cheese cut into cubes
  • 1 Cup Red Onion sliced thinly
  • 1 Cup Black Olives
  • 1 Cup MInt Leaves for garnish

Instructions

  • Chop cucumber, tomatoes, green peppers, red onion, olives, feta, and mint so everything is ready.
  • Whisk olive oil, vinegar, garlic, Dijon, oregano, salt, and pepper until combined.
  • Slice cucumber, dice peppers, halve tomatoes, slice onion, and cube feta.
  • Combine everything, drizzle dressing, toss gently, and finish with mint.
