Equipment

Ingredients

  • 2 Pieces Large Chicken Breasts
  • 2 Pieces Beaten Eggs
  • 1 teaspoon Baking Powder
  • 1 Tablespoon Dried Garlic
  • 1 Tablespoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • ½ Cup Whey Protein Isolate
  • 2 teaspoons Fine Salt
  • 2 teaspoons Cracked Black Pepper

Instructions

  • Cut the chicken into small, even pieces and set out the eggs and dry ingredients in separate bowls to stay organized.
  • Whisk two eggs until smooth in one bowl. In another, mix whey protein, baking powder, garlic powder, onion powder, paprika, salt, and pepper, keeping both bowls side by side.
  • Dip each piece into the egg, then the dry mix, and repeat once more for a thicker crust. Place coated chicken on a lined tray.
  • Fry the chicken in hot oil in batches, turning until golden and crisp on all sides. Lift out and check for doneness.
  • Transfer to a paper towel–lined plate to drain briefly, then serve hot with your favorite dipping sauce.

Notes

  • Marinate for Maximum Flavor: Soak your chicken breast pieces in buttermilk for at least 30 minutes before coating. This tenderizes the meat and helps the popcorn chicken stay juicy inside.
  • Season the Coating Well: Mix paprika, black pepper, salt, and other spices into your flour coating. A well-seasoned coating gives each bite-sized piece of chicken a bold flavor that pops.
  • Work in Batches: Don’t overcrowd the frying pan when cooking. Cooking in smaller batches ensures each popcorn chicken piece gets crispy and evenly cooked.
  • Reheat Without Losing Crunch: If storing for later, reheat in the air fryer instead of the microwave. This keeps the coating crispy while warming the chicken through.
