One: Preheat and Prepare Everything

Preheat the oven to 400°Fahrenheit (200°Celsius)and line a large rimmed baking sheet with parchment paper. In a small bowl, whisk together the maple syrup, olive oil, melted butter, salt, and garlic powder until the glaze is fully combined and uniform. Place the cleaned, dried baby carrots in a large bowl and set the glaze beside it.

Two: Glaze and Coat the Carrots

Pour the maple glaze over the carrots and toss until every piece is fully and evenly coated. Check that no carrots are left bare before moving them to the baking sheet, since uncoated pieces will not caramelize the same way. The carrots should look glossy and uniform when they are properly coated.

Three: Spread in a Single Layer

Spread the glazed carrots onto the prepared baking sheet in an even single layer with clear space between each piece. Crowding the pan prevents caramelization and steams the carrots instead of roasting them. No piece should be sitting on top of another.

Four: Roast and Serve

Roast for 30 to 40 minutes, stirring once or twice during cooking so all sides caramelize evenly. The carrots are done when the edges are deeply golden and dark, the surface is glossy, and a fork goes through the thickest piece without resistance. Remove from the oven, sprinkle with fresh parsley and a crack of black pepper, and serve hot while the maple glaze is still glossy.

The glaze needs to be properly mixed before it touches the carrots. On the first batch, I added the maple syrup, olive oil, and butter to the carrot bowl separately rather than whisking them first, and the butter pooled at the bottom while the maple syrup sat on top rather than distributing evenly across every piece. And if you want to take these in a completely different flavor direction, swap the garlic powder for my spicy Italian seasoning to give the same maple roasted carrots an herbal profile.

  • Properly caramelized maple carrots should have dark, almost burnt-looking edges and a deeply golden surface before you pull them out. If they look pale at 30 minutes, they need more time; color, not the clock, is the indicator.
  • Whole carrots cut on the diagonal into half-inch pieces work just as well as baby carrots here. The diagonal cut increases the surface area in contact with the hot parchment paper, so more edges caramelize rather than just the flat ends.
  • If the glaze darkens too quickly in the last ten minutes, lay a loose sheet of foil over the top and keep the oven at the same temperature. This slows the browning without stopping it and prevents burning before the centers are fully tender.
  • Add a few sprigs of fresh thyme or rosemary directly to the baking sheet before the carrots go in for a herbal note that works well against the maple syrup’s sweetness. Remove the sprigs before serving, and the flavor stays in the glaze without the fibrous texture.
