Homemade Poundcake with Cranberries

This post may contain affiliate links. Read my disclosure policy.

This homemade pound cake recipe bakes a layer of cranberry topping that flips onto the surface as the cake cools, giving it a glossy, jewel-bright finish with no decorating. Almond flour, cream cheese, and fresh lemon juice go into the batter for a dense, moist crumb that holds together cleanly in every slice. It is one of those cake recipes that looks like it came from a bakery.

I wanted something that felt a little more rewarding than my usual weekday routine. The moment it flipped out of the pan and I saw that glossy cranberry layer sitting right on top, I just stood there for a second because it looked so good. It tasted just as impressive as it looked, which doesn’t always happen with cakes that have this much going on. Now it’s the one I reach for when I want something homemade and rewarding.

A Cake Batter Worth Getting Right

The best pound cake comes from a batter that is properly creamed at the start and handled gently once the flour goes in. Beating the butter, erythritol, and stevia until light and fluffy before adding the cream cheese gives you a smooth, even crumb instead of a dense, heavy result. Add the almond flour and baking powder last and stir just until the cake batter comes together, because overmixing at this stage is the most common reason a pound cake recipe falls flat. I also have other baked recipes you can check out, like my brioche loaf, chicken nuggets made from ground chicken for something savory, or cheesy Parmesan baked eggplant as a side dish.

The Cranberry Topping Does the Work

The cranberry layer goes into the pan before the batter, so the topping builds into the cake as it bakes and lands perfectly on top once you flip it. No frosting, no decorating, and nothing to assemble after the cake comes out of the oven. The lemon juice in the topping keeps the cranberries bright and sharp against the cake’s richness.

No-Fuss Guide to Making Pound Cake Recipe

Here is how to make pound cake from scratch with a cranberry topping built right in. Five steps, simple ingredients, and one oven are all it takes to make the best pound cake you have had.

Get Your Cooking Crew Ready

  • Loaf Pan: Line with parchment paper so the cranberry layer releases cleanly when you flip the cakes out.
  • Parchment Paper: Line the sides and bottom of each pan well.
  • Stand Mixer or Hand Mixer: For creaming the butter, erythritol, and cream cheese into a smooth, light base.
  • Small Saucepan: Cook the cranberry topping down into a thick, glossy layer.
  • Spatula: For smoothing the batter evenly over the cranberry layer.

Ingredients You’ll Need for Flavor Explosion:

Cranberry Topping

  • Cranberries: Fresh or frozen, either works. They cook down into a glossy, thick layer.
  • Lemon Juice: Keeps the cranberries tart and bright as they reduce.
  • Water: Added to give the cranberries enough liquid to cook in before the mixture reduces down to a jam-like consistency.
  • Stevia Powder: Sweetens the topping without adding heaviness.
  • Xanthan Gum: Stirred in at the end to thicken the topping into a glossy, set layer.

Cake

  • Unsalted Butter: It creams together with the sweeteners to form the airy base that the rest of the batter builds on.
  • Erythritol: The cake’s main sweetener.
  • Stevia Powder: Add a small amount alongside the erythritol to balance the batter’s sweetness.
  • Cream Cheese: Softened and beaten into the butter mixture until completely smooth.
  • Lemon Zest: Grate one whole lemon and stir it into the batter.
  • Lemon Juice: Added alongside the zest for a clean, sharp citrus flavor.
  • Eggs: Add them one at a time, mixing just until incorporated.
  • Almond Flour: The cake’s base, replacing cake flour.
  • Baking Powder: Gives the batter a gentle lift, so the finished cake isn’t too flat or too dense.

Your Flavor-Packed Game Plan for the Best Pound Cake Recipe

One: Preheat and Prep the Pans

Preheat the oven to 350°Fahrenheit (180°Celsius) and line two loaf pans with parchment paper, covering the bottom and sides fully so nothing sticks. Take the butter and cream cheese out of the fridge now, if you haven’t already, so they reach room temperature before you start mixing. Warm butter and cream cheese make the difference between a smooth batter and a lumpy one.

Two: Make the Cranberry Topping

Place the cranberries, lemon juice, water, and stevia into a small saucepan over medium heat and bring to a boil, stirring occasionally as the cranberries soften and release their juices. Let the liquid reduce by about half, then lower the heat. Stir in the xanthan gum and cook until the mixture thickens to a glossy, jam-like consistency, then remove from the heat and set aside.

Three: Make the Cake Batter

Beat the softened butter with the erythritol and stevia in a large mixing bowl for about 2 minutes, until light and fluffy. Then add the cream cheese and beat again until completely smooth. Stir in the lemon zest and lemon juice, then add the eggs and mix just until fully incorporated, taking care not to overmix at this stage. Add the almond flour and baking powder, then stir until the batter is smooth, scraping down the sides of the bowl as you go.

Four: Layer and Bake

Spread the cranberry mixture evenly in the bottom of each prepared loaf pan, then gently pour the batter over the cranberry layer and smooth the surface with a spatula. Bake for approximately 1 hour, or until the cakes are firm and lightly golden on top. Start checking at the 50-minute mark by gently pressing the center; it should spring back without wobbling.

Five: Cool and Flip

Remove the cakes from the oven and let them cool completely in the pans before touching them. Once fully cooled, run a knife along any edges that may have stuck, then invert each cake onto a serving plate and peel away the parchment paper slowly so the cranberry topping lands cleanly on top. Serve as is or with a spoonful of homemade whipped cream on the side.

Recipe Notes by Zuzana:

The single most common mistake with this cake is flipping it too early. I did it once when the cake had cooled for only about 20 minutes, and the cranberry layer tore in half as I inverted it, taking chunks of cake with it instead of releasing cleanly. The cranberry mixture sets as the cake cools completely, and that full set lets it come away from the parchment as one intact, glossy layer. • Do not flip the cakes while they are still warm. The cranberry layer needs to be fully set before it releases cleanly from the pan. Patience here saves the presentation.
  • Scrape down the sides of the mixing bowl after each addition so that every part of the batter is evenly combined, and no pockets of unmixed flour remain at the bottom.
  • If you like vanilla in a pound cake, add a teaspoon to the batter alongside the lemon juice for a warmer, more rounded flavor without overpowering the citrus.
  • Use fresh cranberries when they are in season for a sharper, more vibrant topping. Frozen cranberries work just as well out of season; just don’t thaw them before adding them to the pan.

Kitchen Q&A: Let’s Crack It

What Pairs Best with Moist Classic Pound Cake?

A spoonful of whipped cream or a scoop of strawberry ice cream on the side is all this cake needs to become a full dessert plate. It also goes really well after a savory main like this shredded chicken in a slow cooker for tacos, when you want something bright and sweet to finish the meal. A cold brew sorrel drink or coffee, paired with a cold slice straight from the fridge, is another combination that works every time.

What Smart Storage Hacks Make the Perfect Pound Cake Recipe?

Wrap the cake tightly in plastic wrap or store it in an airtight container at room temperature for up to 2 days, or in the fridge for up to 5 days. The cranberry topping stays glossy and set in the fridge without affecting the cake’s texture underneath. Slice it cold straight from the fridge or let it come to room temperature for about 20 minutes before serving.

How to Freeze Traditional Pound Cake Like a Pro?

This cake freezes well once fully cooled. Wrap individual slices tightly in plastic wrap, place them in a freezer-safe bag, and freeze for up to 2 months. Thaw overnight in the fridge or for a couple of hours at room temperature before serving, and the texture returns without any issues.
