Two: Oil and Season Both Sides

Three: First Bake

Slide the baking sheet into the preheated oven and cook for 10 to 12 minutes, until the tops start to show real color and the spice crust caramelizes at the edges. Pull the sheet out and flip each pork chop carefully using tongs without pressing down on the surface. Return immediately to the oven.

Four: Finish and Rest

Bake for another 10 to 12 minutes until the edges are golden, the turbinado sugar has caramelized into a dark crust at the edges, and the internal temperature at the thickest point reads 145°Fahrenheit (62°Celsius). Remove the pork chops from the oven and let them rest on the baking sheet for 2 minutes before cutting into them. Serve warm straight from the sheet.

Brushing the olive oil first gives the spice blend a sticky surface to grip, and that is what produces the defined crust rather than spices that slide around the tray. For a sharp, fresh side to serve alongside these boneless pork chops, my kale salad with lemon dressing is the most natural pairing on the same plate.

  • Take the pork chops out of the fridge 15 to 20 minutes before cooking so they reach room temperature.
  • Use a meat thermometer at the thickest point of each chop rather than relying on the timer alone. Chop thickness varies, and the color the turbinado sugar produces can make the surface look done before the internal temperature is actually there.
