This broccoli cheddar casserole is a three-ingredient recipe anyone can make, even with no kitchen experience. Fresh broccoli florets, sharp cheddar cheese, and cream of mushroom soup come together into a cheesy, bubbling side dish that requires little effort. This broccoli cheese casserole recipe requires only simple ingredients and an even simpler way to cook.

My cousin used to bring this to every family dinner, and nobody ever left any behind. I asked her for the recipe once, expecting a long list, and she told me it was three things from the fridge and a hot oven. I have been making it the same way since I learned the recipe.

Fresh or Frozen Broccoli Both Work

You can use fresh broccoli when it is available and you want the most texture in the finished casserole, but frozen broccoli works just as well when you are working with what is already in the freezer. If you use fresh broccoli, steam it until just tender before adding it to the bowl, so it finishes cooking through properly in the oven without going mushy. Frozen broccoli needs to be fully thawed and drained well first, or the extra moisture will make the casserole watery rather than thick and cheesy.

The Easiest Side Dish You Will Make All Week

This broccoli casserole goes with almost anything without clashing and comes together faster than most people expect from a baked dish. No sauce to make from scratch, no layering technique to get right, and no special equipment beyond a baking dish and a mixing bowl. A perfect side for pan-seared pork loinjuicy air fryer boneless pork chops, or shredded chicken in slow cooker for tacos.

No-Fuss Guide to Making Broccoli Cheddar Casserole

Here is how to put together a cheesy broccoli cheddar casserole from scratch in four simple steps. One bowl, one baking dish, and the oven do the rest.

Get Your Cooking Crew Ready

  • Baking Dish: It gives the casserole enough depth to bubble up properly.
  • Mixing Bowl: A large bowl gives you enough room to stir everything without spilling.
  • Spatula: Use to mix the ingredients before baking.

Ingredients You’ll Need for Flavor Explosion:

  • Broccoli Florets: Smaller pieces distribute more evenly throughout the casserole.
  • Sharp Cheddar Cheese: Sharp cheddar delivers a stronger, cheesier flavor.
  • Cream of Mushroom Soup: The base that holds the whole casserole together.

Your Flavor-Packed Game Plan for Broccoli Casserole Dish

One: Preheat and Prep

Preheat the oven to 375°Fahrenheit (190°Celsius) and grease a baking dish so the casserole releases cleanly when you serve it. Shred the sharp cheddar cheese from the block now, if you have not already, so it is ready to go into the bowl. If you are using fresh broccoli, cut it into even florets and set it aside before you start steaming.

Two: Mix the Soup and Cheese Together

Add the cream of mushroom soup to a large mixing bowl, then pour in the shredded cheddar cheese. Stir until the cheese is fully combined into the soup base and the mixture looks thick, uniform, and evenly blended. This step builds the creamy, cheesy base that coats every piece of broccoli before the casserole goes into the oven.

Three: Fold in the Broccoli

Add the broccoli florets to the bowl with the cheese and soup mixture. Fold until every floret is fully coated and the broccoli is evenly distributed throughout the base, with no dry spots remaining. The mixture should be thick and cohesive at this stage before going into the baking dish.

Four: Bake and Serve

Pour the mixture into the greased baking dish and spread it out evenly so the top is level across the whole surface. Bake for 25 to 30 minutes, until the casserole is hot, bubbling at the edges, and lightly golden and crispy on top. Let it sit for a few minutes before serving so it firms up slightly and portions cleanly without falling apart.

Recipe Notes by Zuzana:

The anti-caking agents in packaged pre-shredded cheese prevent it from melting cleanly into the cream of mushroom soup base, and shredding your own from a cold block takes two minutes and fixes the problem entirely. Another casserole that uses the same cream of mushroom soup base to build a completely different and equally satisfying dish, my cream of mushroom green bean casserole is worth trying.

  • Stir in a pinch of garlic powder before it goes into the baking dish. It adds a quiet, savory depth that you notice in every bite without being able to pinpoint it.
  • Crush a handful of Ritz crackers and scatter them over the top before it goes into the oven for a buttery, crispy topping that makes a big difference in the final texture.
  • If you have leftover rotisserie chicken or cooked rice, fold it into the broccoli mixture before baking to turn this side dish into a full rice casserole that feeds more people without extra work.
  • Shred the cheddar yourself every time. The difference between fresh and pre-packaged shredded cheese in a melted casserole is noticeable and worth the extra two minutes.

Kitchen Q&A: Let’s Crack It

What are the Best Pair-Ups to Try with Fresh Broccoli Cheese Casserole?

This broccoli and cheese casserole pairs well with almost any main, but it’s better alongside something simple like sauteed chicken. It also works well on a holiday table, next to baked sausage links with sauerkraut, for a warm, hearty spread. A green salad on the side balances the casserole’s richness without competing with it.

What are the Smart Storage Hacks for Cheesy Casserole?

Let the casserole cool completely before transferring the leftovers to an airtight container and refrigerating for up to 4 days. Reheat individual portions in the microwave in short intervals, stirring between each one so the heat distributes evenly and the edges don’t dry out. Cover the dish with foil if reheating the whole casserole in the oven to keep the top from overbrowning before the center heats through.

How to Freeze The Best Broccoli Side Like a Pro?

This casserole freezes well, both before and after baking. Let it cool completely, wrap the baking dish tightly with plastic wrap, followed by foil and freeze for up to 2 months. Thaw overnight in the fridge, then reheat covered in the oven until heated through; uncover for the last few minutes to crisp the top back up.
